Alpha-gal syndrome, also known as alpha-gal allergy or meat allergy, is a rare allergic reaction to a carbohydrate molecule called alpha-gal. This molecule is found in the saliva of lone star ticks and certain other tick species. When a person is bitten by one of these ticks, their immune system can develop antibodies against alpha-gal, leading to an allergic reaction when they consume mammalian meat or products derived from mammals.
Symptoms of alpha-gal syndrome typically include hives, itching, swelling, gastrointestinal symptoms such as nausea and diarrhea, and in severe cases, anaphylaxis, a life-threatening allergic reaction that requires immediate medical attention. The onset of symptoms may occur several hours after consuming meat, which can make it difficult to identify the cause of the allergic reaction.
